Mac-a-faux-roni and Cheese
2 tablespoons butter
2 cloves. minced
8 oz. cream cheese
3 cups heavy cream
16 oz grated swiss or Gruyere cheese or both
¼ teaspoon smoked paprika
½ teaspoon dried mustard
½ – 1 teaspoon salt
½ – 1 teaspoon pepper
1 head chopped cauliflower or 2 large bunches broccoli
In a large sauté pan over medium heat, melt butter. Add garlic and sauté until just aromatic. Pour in heavy cream and cream cheese. Using a wire wisk, stir until well combined and cream cheese is fully melted. Wisk in dried mustard, salt, pepper and smoked paprika. Add in swiss/gruyere cheese ½ cup at a time, repeat until all the cheese has been add and it is all melted. Finally add in chopped cauliflower or broccoli, stirring until well coated.

Pour mixture into a medium sized glass baking dish, such as a Pyrex or individual gratin bowls. Bake 350 for 30.
Tasty tip. In a small sandwich baggy, crunch up a cup of pork rinds and top Mac-a-faux-Roni and cheese just before baking. Or even some delish crispy bacon tidbits.
